Sauteed Fresh Green Beans Recipe: Ingredients

  • 1 lb. fresh green beans
  • 2T. butter
  • 1T. very thin onion slices, cut into 1” lengths
  • 1t. sea salt
  • 1/4t. freshly ground pepper 
  • 1 pinch baking soda

How to Make Sauteed Fresh Green Beans

  1. Let butter melt in skillet over medium-low heat, while you wash and trim beans. Do not use your largest burner. 
  2. Stir in the onion. Due to its thinness, it will be soft in less than a minute. 
  3. Add beans to pan. 
  4. Sprinkle with the salt and pepper. 
  5. Toss with a spatula to coat.
  6. Cook 3 minutes. Stir in baking soda. 
  7. Cover pan and cook 10 more minutes, more or less, until they are tender to your preference

Sauteed Fresh Green Beans: Tips for Success

  • It takes a good pan to sauté the beans just right. I like this American made, heirloom quality skillet (view here)
  • Bacon fat makes a tasty substitute for butter. 
  • Thinly sliced food can burn very quickly in a skillet. Until you add the beans, gently move the onion around the pan. Lower heat, if necessary.
