Venus de Milo Soup Recipe: Ingredients

  • 1 lb. ground beef 
  • 2 stalks celery, chopped
  • 28 oz. canned tomatoes 
  • 2 cans water
  • 4 bouillon cubes
  • 1 packet onion soup mix
  • 2 cans mixed vegetables 
  • 1/2c. orzo
  • 1T. Worcestershire sauce

How to Make Venus de Milo Soup

  1. Place first six ingredients into soup pot (so, burger through onion mix).  Bring to a boil. 
  2. Stir in mixed vegetables and boil 20 minutes. 
  3. Stir in orzo, and boil for 10 more minutes. 
  4. Remove from heat, and stir in Worcestershire sauce.

Venus de Milo Soup Tips for Success

  • A good quality pot will cook your Venus with less change of boilovers and scorching. I like this Italian made, heirloom quality stockpot. (view here). 
  • Veg All brand tastes best. You can substitute frozen mixed vegetables for the canned, but the flavor is different from authentic VDM soup (still good, though). 
  • Some prefer to brown the hamburger in the pot, and then proceed as directed. 
  • After soup comes to a boil, turn it down just enough that it doesn’t boil over. 
  • Sprinkle Parmesan or Romano cheese on each serving.
