Rice and Beans is a simple recipe, in which sautéed aromatics flavor kidney beans, served alongside clean, white rice.

Rice and Beans Recipe: Ingredients

  • 2T. olive oil
  • 2T. onion, chopped 
  • 2T. green pepper, chopped 
  • 1 clove garlic
  • 1t.  sazon 
  • 2t. chicken bouillon powder 
  • 1/4t. oregano
  • 2T. tomato paste 
  • 1c. water, divided
  • 1 can kidney beans, drained and rinsed 
  • 1t. Adobo
  • 2c. cooked rice

How to Make Rice and Beans

  1. Gently sauté onion, green pepper, and garlic until it begins to soften. 
  2. Stir in sazon, bouillon powder, oregano, and tomato paste. 
  3. Stir in half of the water, followed by the beans and adobo. Keep the rest of the water nearby, and add it as desired, to get the texture the way you like it. Bring to a boil. 
  4. Turn to low, and heat for 10-15 minutes, to develop the flavor and let the beans soften a bit more. 
  5. Serve alongside or atop heated rice.

Rice and Beans Tips for Success

  • This recipe is a great use for leftover rice. 
  • Sazon is a seasoning that is sold wherever they have Latin American foods. My favorite brand is Badia. 
  • If you prefer firmer beans, use less water, and cook until just heated through. 
  • For a more digestible dish, stir in a pinch of baking soda after it’s done cooking.
