Quick and Easy French Onion Soup: Ingredients

  • 1 pkt. dried onion soup mix
  • 3c. water 
  • 1/4t. black pepper
  • 1 bay leaf
  • 2T. butter
  • 1T. white vermouth (optional)
  • 1/4 lb. Swiss cheese, shredded or 4 slices
  • 4 inch-thick pieces baguette, toasted

How to Make Quick and Easy French Onion Soup

  1. Cook onion soup with water, according to package directions. 
  2. Let that heat through over medium-low, and preheat your broiler (lower setting, with racks about 6” from flame), while you prepare your bowls. 
  3. Place a sheet of foil on a sturdy baking pan, and arrange 4 heatproof crocks on it. 
  4. Grease the crocks with butter, including around their rims. 
  5. Place a piece of the bread in each bowl. 
  6. Stir butter and vermouth into soup, before ladling it into the crocks. 
  7. Arrange cheese over the top of each.
  8. Slide pan with crocks under the broiler, until lightly browned.

Quick and Easy French Onion Soup Tips for Success

  • I like a smaller pot for this recipe, because it’s usually made for just a few people. A quality 2-qt. pot is a good size for prepping the broth. I like this heirloom quality pot (view here)
  • I can’t tell any difference between name brand onion soup mix and the off brands…except for the price. 
  • Some cheese covering the crocks’ rims will help protect them from the extreme heat of the broiler. 
  • Serve with a prepared salad mix and the rest of the baguette. Pass around a traditional French vinaigrette and some Président butter.
