Pizza Beans Recipe: Ingredients

  • 1/4lb. stick pepperoni, divided
  • 3 cans Cannellini beans, 15 oz. size, drained and rinsed 
  • 1 can mushrooms, drained
  • 2T. green pepper, chopped
  • 2T. onion, chopped 
  • 1 small can sliced black olives
  • 1qt. jar spaghetti sauce
  • 2c. shredded mozzarella cheese

How to Make Pizza Beans

  • Place oblong glass casserole dish into oven, and preheat to 350 degrees. 
  • Cut pepperoni stick in half. Cut one half of it into thin slices and set aside. Dice the other half into 1/4” cubes. 
  • Remove hot oblong glass casserole dish from oven and put the pepperoni cubes into it. When they release some of their fat, use a small piece of paper towel to grease the dish with it. 
  • Add all of the vegetables to the casserole, stirring to blend. 
  • Top with cheese. 
  • Arrange pepperoni slices over the cheese. 
  • Bake at 350, until brown and bubbly, about 25 minutes.

Pizza Beans Tips for Success

  • You can speed up this recipe by heating the bean and sauce mixture before topping. This can be done in a pot on the stovetop, or you can even just zap the casserole in the microwave before topping. That cuts the baking time in half. 
  • This recipe works equally well with any favorite pizza topping. The only caveat is that any meat you use should be cooked first. 
  • For more pizza flavor, top with seasonings before baking, or set them out with the salt and pepper. Pizza parlor seasonings would be oregano, red pepper flakes, garlic salt, and spaghetti cheese.
