Gazpacho (easy and authentic recipe)

Gazpacho! Was there ever a more delicious, refreshing way to get your vegetables? If you’ve been looking for a just-right Gazpacho recipe, without having to scroll down forever just look at it, you’ve arrived!

This simple, blender Gazpacho is so packed with fresh vegetables, it is also known as Salad in a Glass.  

Without further ado, here’s my Gazpacho recipe (a more compact, printable version appears below):

Gazpacho: Ingredients

  • 6c. V-8 juice
  • 1 large cucumber
  • 1 bell pepper
  • 1T. chopped Vidalia onion
  • 1 small clove garlic
  • 1 dash Tabasco sauce
  • juice of 1/2 lemon
  • 1/4t. black pepper

How to Make Gazpacho

  1. Cut up vegetables into large chunks, so they’ll go through the blender easily.
  2. Coarsely puree everything together in blender.  If all of the ingredients are a tight fit for your blender, you may blend it up in two batches. 
  3. Serve right from blender into glasses; or present in a large, clear bowl, and ladel into bowls.

Gazpacho Tips for Success

  • This blender (view here) has been going strong for me for quite a while now.
  • Gazpacho is good as a hot soup, too.  See my soup tips infographic below for some good, general tips on making soups.
  • If you want a chunkier gazpacho, simply set aside some of the vegetables and cut them up, instead of pureeing all of them.  Another way would be to include additional cucumbers and peppers in 1/2″ dice.
  • I prefer to serve this in rocks glasses, with a lemon slice racked on the rim of each. 
  • If serving in bowls, place the lemon slice on a small plate to the side.
