Crockpot White Chicken Chili Recipe: Ingredients

  • 3 cans condensed cream of chicken soup, reconstituted 
  • 1t. cumin
  • pinch of garlic powder 
  • 1/4t. pepper
  • 1 can corn, 15 oz. size, drained
  • 1 c. diced cooked chicken 
  • 1 can Cannellini beans, 15 oz. size, drained
  • 2 T. tequila 
  • chopped fresh cilantro and tortilla strips, for garnish

How to Make Crockpot White Chicken Chili

  1. In a Crockpot, reconstitute the soup. 
  2. Whisk in cumin, pepper, and garlic. 
  3. Stir in corn and chicken. 
  4. Set Crockpot to LOW and cook for 4 hours (give or take; it’s really flexible), or HIGH for 2 1/2 hours. 
  5. Stir in beans and continue heating for 20 minutes. 
  6. Stir in the tequila. Heat 5 minutes. 
  7. Season with cilantro and tortilla strips, if desired; and serve.

Crockpot White Chicken Chili Tips for Success

  • You probably already have a crockpot or two, but they make great gifts, too! I just found this Crockpot bundle (view here), in which you get a round pot, an oval pot, and a mini. 
  • I think it’s safer to get your food to 160 degrees ASAP; although many prefer to “set it and forget it”). In Step 4, set Crockpot to HIGH, and heat the food for 30 minutes, before turning it to LOW. Then, proceed in 2-3 hours. 
  • To get the best of both, you can do the Steps 1-3 on the stove, heat to 160, and transfer to Crockpot… then set it and forget it!
