Sweet Potato Balls Recipe: Ingredients
- 2 cups cooked, mashed sweet potatoes
- 1T. melted butter
- 1/4c. brown sugar
- 1/2t. salt
- 1/4t. pepper
- 1/4t. cinnamon
- 2c. unseasoned crumbs
- 32 mini marshmallows
How to Make Sweet Potato Balls
- Grease generously one large, or two smaller baking sheets.
- If your sweet potatoes are cold, warm them gently in the microwave.
- Stir in seasonings (so, from butter through cinnamon). Set aside.
- Preheat broiler to “Low.”
- Place crumbs in shallow container.
- Form Tablespoon-sized balls, placing onto the crumbs as you go. When you get up to four, shake gently to coat, and place on prepared baking sheet.
- Repeat until all of the mixture is gone.
- Broil for a few minutes, until browned.
- Remove from broiler. Turn each ball over, gently push a marshmallow into each.
- Return to broiler to lightly brown.
