Ham Loaf Tips for Success
- Grandma ground her ham by using an old crank-style grinder that clamped to the edge of the table… but a food processor does a dandy job, too.
- Use 1 or 2 eggs, depending on size.
- A thin, cheap loaf pan can result in a ham loaf that is dry and leathery on the outside, and undercooked on the inside. A good pan, such as this American-made one (view here) does a better job, and is heirloom quality.
- For a flavor twist, top with barbecue sauce prior to baking.
- Hawaiian style: press three pineapple rings into the top of the loaf before baking.
- Another variation: brush with a blend of honey and Dijon mustard, and dot the top with 12-15 whole cloves.
- For less fat, form into a loaf on a greased sheet of foil. Fully line a jellyroll pan with foil, and place a wire cookie rack on pan. Lift loaf by foil, and place on rack. Gently poke some holes in it to drain the fat.
