Boiled Spice Cake Recipe: Ingredients

For the boil:

  • 1 cup butter
  • 2 cups sugar
  • 1 t. cloves
  • 1 t. cinnamon 
  • 1/2 t. salt
  • 1 t. nutmeg 
  • 1/4 t. ginger 
  • 1 cup raisins 
  • 2 cups milk 

Dry ingredients:

  • 3 cups flour 
  • 1 t. baking powder
  • 2 t.  baking soda

Also:

  • 2 eggs

How to Make Boiled Spice Cake

  1. Prepare two 9”x2” round cake pans by greasing, and flouring lightly. 
  2. Preheat oven to 350 degrees. 
  3. Place “boil” ingredients into saucepan, and whisk together. 
  4. Heat over medium flame, until it comes to a boil. 
  5. Remove from heat, and pour into mixer bowl. Allow to cool. 
  6. Sift dry ingredients into mixture. Stir just enough to wet the powdery ingredients. 
  7. Add eggs and beat two minutes. 
  8. Pour into prepared pans.
  9. Bake for 45 minutes.

Boiled Spice Cake Tips for Success

  • I’m not big on coated pans, so I prefer these USA-made pans (view here). They have a textured bottom. Moisture from the cake falls into the grooves and makes for easy release without cracking. 
  • As an extra precaution, you may also wish to line each cake pan with a circle of waxed paper or parchment.
  •   The boil must be cool enough not to curdle the eggs in Step 5. 
  • Place on cooling rack to cool down.
  • Signs that it’s done: starts to pull away from the edges, center springs back when gently poked, and has an internal temperature of at least 200 degrees.
